Hunan is a hinterland of rolling hills, rivers, lakes and marshes. I think in an urban western society, often there is a disconnect between our food and how it’s farmed, harvested and processed and makes food lack gravity. A supermarket might be more efficient and convenient, but it lacks the bustle of going to a market where after choosing your grass carp, the farmer will also as part of the service put it down, gut it and scale it in a few practised motions with a heavy cleaver. It is an interesting reminder that the food on your table had possibly gotten there through the hard work of a fisherman, a net and a small diesel motorboat.
